Ingredients:
¾ lb Ground Turkey
½ Red Onion
1 Green or Red Pepper
2 Roma Tomatoes
1 ½ Jalapenos
3 tbsp of Salsa
4 C. Spinach
Spices
1 tsp black pepper
2 tsp smoked paprika
1 tsp cumin
1 tsp oregano
2 tsp garlic powder
Optional: 1 tsp coriander
Directions:
Dice onion, pepper, tomatoes, and jalapeno.
Brown ground turkey with spices and 1 tbsp of olive oil in a preheated frying pan.
Once cooked, remove the turkey from the pan.
Add ½ tbsp of olive oil, vegetables, and salsa. Sauté until fork tender.
Add spinach, turkey, and vegetables to a bowel.
