FIT Meals - Taco Salad

Servings Prepared:4

Ingredients:

  • ¾ lb Ground Turkey

  • ½ Red Onion

  • 1 Green or Red Pepper

  • 2 Roma Tomatoes

  • 1 ½ Jalapenos

  • 3 tbsp of Salsa

  • 4 C. Spinach

Spices

  • 1 tsp black pepper

  • 2 tsp smoked paprika

  • 1 tsp cumin

  • 1 tsp oregano

  • 2 tsp garlic powder

  • Optional: 1 tsp coriander

Directions:

  1. Dice onion, pepper, tomatoes, and jalapeno.

  2. Brown ground turkey with spices and 1 tbsp of olive oil in a preheated frying pan.

  3. Once cooked, remove the turkey from the pan.

  4. Add ½ tbsp of olive oil, vegetables, and salsa. Sauté until fork tender.

  5. Add spinach, turkey, and vegetables to a bowel.

  6. Enjoy your FIT meal!
